Écoutons donc maintenant quelques titres de "live cheese", à commencer par deux tracks featuring Baba Olatunji, percussioniste décédé récemment qui donne une saveur africaine aux jams latino-americano-bluegrass-rock du groupe: "Jingo" et "San Jose" (11,2 Mo et 13, 1 Mo 128 kbps MP3, live mars 2000 au Warfield à San Francisco). Deux longues jams de plus de 12 minutes chacune à la saveur acoustique assez terribles.
Passons ensuite directement à un "Galactic" en hommage au groupe de la Nouvelle Orléans du même nom (16,9 Mo 128 kbps MP3, live jour de l'an 2002-2003 au Bill Graham Civic Center à San Francisco). 18 minutes à tiroir d'explorations psychedelico-funk. Relativement extraordinaire. Le "Nardis" de mars 1997 (live au New Sheridan Opera House à Telluride, Colorado, 5,2 Mo 128 kbps MP3), dans le même esprit, montre à quel point String Cheese Incident a évolué depuis cette époque, et dans le bon sens: on entend aujourd'hui autre chose qu'un groupe qui voudrait être Phish à la place de Phish!
